Recipes: Spice Things Up With Organic Oven Roasted Rosemary Chicken

Need a good dish to add to the mix? We’re loving this simple chicken course for weeknights, weekends or even dinner when guests come over. Trust us, your friends & family will ask for the recipe.

Ingredients:

  • 1 (3 pound) whole organic chicken

  • 1/4 cup chopped fresh rosemary

  • One fresh organic lemon

  • sea salt (to taste)

  • pepper (to taste)

Preheat oven to 350 degrees F (175 degrees C).

  1. Season chicken with salt and pepper to taste. Stuff with the onion and rosemary. Place chicken in a 9x13 inch baking dish or roasting dish.

  2. Roast in the preheated oven for 2 to 2 1/2 hours, or until chicken is cooked through and juices run clear. Cooking time will vary a bit depending on the size of the bird.

Pro tip:
Skin can be removed after cooking for a leaner, cleaner meal. For more intense flavor, we love adding a squeeze of fresh lemon over the finished dish with a pinch of sea salt and fresh ground peppercorns.
